[bin][postprocessing] add pvpython version check for 5.11

What this MR does / why does DuMux need it:

extractlinedata script checks now also for the new Paraview/pvpython version 5.11.

Notes for the reviewer

Note that the use of the PlotOverLine function is slightly different from earlier pvpython versions.
