[doxygen] Temporarily remove copydoc and copydetails with file paths. Copydoc and copydetails with file paths will likely work again with doxygen 1_8_18, as indicated in the change of the README.

Add the entries for the shallow water model in module.txt.
Ensure that all classes and functions have docstrings.
Document the ShallowWaterFlux class.

[fix][cmake][handbook] Replace VERSION_GREATER_EQUAL by NOT .. VERSION_LESS to be backward-compatible

UseLATEX.cmake is still used for Dune 2.6.
